After years on the streets, the popular Waffle Bus food truck is finally opening its first brick and mortar in the Heights at 1835 N. Shepherd Dr.
Waffle Bus owner Phi Nguyen had been looking for a permanent location for over a year before finding the Heights location. Originally, Nguyen found a spot in the Fairview District, but the project was put on hold and he found the space next to Cane Rosso to be a perfect fit.
One of the contributing factors for Nguyen to take the leap into opening a restaurant is because people have such a hard time finding the truck. He mentioned that due to the volume of catering they do, they’re hardly ever available to the general public anymore.
“We wanted to do Montrose or the Heights because those neighborhoods are big food supporters, especially food truck supporters,” Nguyen said.
The new spot will be open all day, every day, with the food trucks menu and more. They’re bringing back specialty items, breakfast items, and dessert items. For something sweet, expect options such as a churro ice cream sandwich, milk and cereal milk shake, and more.
Popular offerings like the fried chicken and waffle sandwich, waffle fries with toppings, and fried chicken sliders with waffle fries used as buns, will be a staple on the menu.
The Waffle Bus takes classic items and puts a delicious spin on them. They’ve re-invented the waffle and now will be sharing it in an accessible way. Nguyen is hoping for an early 2019 open and he’s excited to share with the Heights what the Waffle Bus has to offer.
